Here are some recommendations/opinions by Simone Marzani (who I think explored Durham a lot during his postdoc):
1) John Duck on Claypath (modern, lots of good beer, don't know about food)
2) Market Tavern on Market Place (central, food not great)
3) Court Inn near the prison (good food, expensive beer)
4) Swann on Elvet Bridge and the three cygnets (don't know about good, very inexpensive drinks)
5) Ye Old Elm Tree on Crossgate (very good food, good beer, great atmosphere)
6) Garden House Inn on Framwellgate Peth (very good food, good beer, great atmosphere)
